Pulled Buffalo Chicken Salad With Blue Cheese
This recipe is an absolute favorite in my house. We are a big fan of the buffalo flavor combined with the blue cheese.

2 chicken breasts, boneless
5 bacon strips
¼ cup Buffalo Sauce (find one that has little to no carbs)
5 cups chopped romaine lettuce
½ cup blue cheese dressing
½ cup crumbled blue cheese
1/3 cup chopped red onion
Boil a large pot of water and then add the chicken breasts to the water. Reduce the heat to a simmer and cook the chicken breasts until they reach 170 degrees F. This will take about 25 minutes.
Transfer the chicken to a bowl to cool. Once cooled shred the chicken.
Cook the bacon strips in a skillet until crispy.
Now toss the shredded chicken with the buffalo sauce.
Divide the lettuce into 2 servings/bowls. Split the shredded chicken mixture evenly amongst the servings. Do the same with the blue cheese crumbles, blue cheese dressing and chopped red onion.
Finish each salad with the crumbled bacon and serve.
