Chicken and Broccoli Alfredo

You don't have to miss out on this rich and creamy meals when you are on a keto diet.  Just modify a few of the ingredients and you can still enjoy those rich and delicious meals.  

Give this one a try...


2 large boneless, skinless chicken breasts
½ cup broccoli florets
1/3 cup mascarpone
3 Tbsp heavy (whipping) cream
2 Tbsp Ghee
2 tsps minced garlic
2 pinches sea salt
¼ tsp lemon pepper seasoning
2 Tbsp shaved Asiago cheese
2 cups zucchini noodles


Boil a large pot of water over high heat. Add the chicken breasts and completely submerge them. Reduce the heat to low and cover and simmer. Simmer until the internal chicken temperature reaches 165 degrees F or about 20 minutes. Remove the chicken and set aside.

While the chicken is cooking spiralize the zucchini noodles and set aside.

During the cooking of the chicken you can also steam the broccoli florets. Chop into bit size pieces when you are done.

In a medium skillet, heat the mascarpone, heavy cream, ghee, garlic, salt and lemon pepper seasoning. Once the mixture is hot, reduce the heat to low and add the broccoli and the zucchini noodles. Cook all together and stir frequently for about 5 minutes.

While the sauces, broccoli and zucchini noodles are simmering shred the chicken and add the shredded chicken to the skillet. Mix everything together until hit or about 2-3 minutes.

Sprinkle with Asiago cheese and serve.
