For those who like fish, but haven’t found a Salmon recipe that they like give this recipe a try. It is full of flavor and doesn’t have the fishy taste which turns many people away from salmon.
Ingredients:
4 Tbsp Ghee
1 Tbsp Garlic Minced
1 Tbsp fresh thyme leaves
Dash of sea salt
4 (4-6 ounce) salmon filets
1 shallot, quartered
¼ lemon
Directions:
Preheat the oven to 450 degrees F.
In a small bowl, mix 2 Tbsps of ghee with the garlic, thyme, and salt. Set this aside for later.
In a medium cast iron skillet, melt the remaining 2 Tbsp of ghee over medium heat. Once the ghee is hot, add the salmon filets, skin-side down.
Place the shallot quarters between each salmon filet. Sear the filets for 1 minute and then flip and sear the other side for 1 minute.
Now break the shallot quarters into individual layers, and top the salmon with the seasoning mixture that you set aside. Transfer the skillet to the oven and bake for 6-8 minutes.
Serve the salmon and roasted shallots hot, with a squeeze of lemon juice.
