Sausage Meatloaf

I am not normally a fan of meatloaf, but this recipe will be at the top of my meal list whenever I have the choice. 

It only takes a total of 50 minutes to prep and cook.  Contains 50 gms of protein per serving and only 5 grams of net carbs. 

I hope you enjoy this recipe as much as I do. 

Sausage Meatloaf With Orange Zest 


1 lb  sweet Italian sausage
2 cups crushed pork rinds
2 cups shredded mozzarella cheese
3 large eggs
1/3 cup heavy (whipping) cream
2 Tbsp Worcestershire sauce
½ yellow onion, chopped
4 large sage leaves, chopped
½ tsp garlic powder
½ tsp onion powder
1 tsp sea salt
½ tsp ground black pepper
2 Tbsps grated orange zest


Preheat the oven to 350 degrees F.

In a large bowl, combine the sausage, pork rinds, mozzarella cheese, eggs (lightly beaten), heavy cream, Worcestershire sauce, onion, sage, garlic powder, onion powder, salt and pepper. 

Mix well using your hands until all ingredients are mixed evenly.  Evenly pack the meatloaf mixture in a meatloaf baking dish (usually 4 x 9).  Sprinkle orange zest over the top of the meat. 

Bake until cooked through, or roughly 45 minutes.  Let it sit for 5-8 minutes and then slice and serve.
